The Holstein cow is the most widespread breed in milk production for Parmigiano Reggiano. Its presence within the PDO is based on a combination of production continuity, adaptation to the territory and a raw material suited to rigorous cheesemaking.
This milk gives rise to a Parmigiano Reggiano that is clean, balanced and highly versatile, capable of offering different profiles depending on the dairy, the ageing and the type of production.
