Bianca Modenese
Rarity, territorial roots and an organic production with a highly distinctive profile.
Bianca Modenese is a historic cattle breed from the Modena area, now recovered thanks to the work of breeders and enhancement projects linked to livestock biodiversity.
During the rise of more productive breeds, its presence declined drastically until only a few hundred animals remained. For this very reason, it now represents one of the rarest and most valuable expressions within the world of Parmigiano Reggiano.
It is raised on small farms and its milk yield is limited: in many cases, one cow produces approximately 5 to 10 litres per day. Less quantity, but a raw material of great interest for cheesemaking.
A single reference, built from the breed rather than from volume
In this line we work exclusively with an organic Parmigiano Reggiano DOP produced with Bianca Modenese milk, a rare production even within specialty ranges.
The youngest ageing we offer starts from 30 months
This is not a selection intended for early release. From this ageing onward, the cheese begins to express more clearly the identity of the breed, the complexity of its environment and the structure of such a limited raw material.
- Organic Parmigiano Reggiano DOP certified according to European Union regulations.
- Produced exclusively with organic Bianca Modenese milk.
- Reduced production and naturally limited availability.
An uncommon production even within the most selective Parmigiano Reggiano
True scarcity
The current limited presence of the breed and the small size of the farms mean that this selection is neither abundant nor standardisable.
Slow Food Presidium
It is linked to a specific recovery and enhancement project for Bianca Modenese, a historic breed that once came close to disappearing.
Cheesemaking vocation
The composition of this milk makes it especially interesting for Parmigiano Reggiano production, with effective coagulation and a good curd structure.
Choosing Bianca Modenese means opting for a scarce production linked to local biodiversity and sustained by a raw material that does not seek mass yield, but personality, structure and origin.
