Bianca Modenese is a historic cattle breed from the Modena area, now recovered thanks to the work of breeders and enhancement projects linked to livestock biodiversity.

During the rise of more productive breeds, its presence declined drastically until only a few hundred animals remained. For this very reason, it now represents one of the rarest and most valuable expressions within the world of Parmigiano Reggiano.

It is raised on small farms and its milk yield is limited: in many cases, one cow produces approximately 5 to 10 litres per day. Less quantity, but a raw material of great interest for cheesemaking.
